Peanut Butter Cornflake Bars (no corn syrup)

Peanut Butter Cornflake Bars without corn syrup are a no-bake treat made by combining peanut butter, maple syrup, and honey with crushed cornflakes to form a sturdy base. An optional vanilla protein powder can be added for extra nutrition. The bars are topped with a melted semi-sweet chocolate and coconut oil mixture that sets after freezing. These bars offer a crunchy texture from the cornflakes and a smooth, sweet peanut butter and chocolate flavor, suitable for snacks or quick energy bites.

Description

This recipe for Peanut Butter Cornflake Bars uses natural sweeteners like maple syrup and honey instead of corn syrup, providing a chewy base with a peanut butter flavor. The cornflakes, crushed to achieve better binding, add crunchiness and structure to the bars. Optionally, vanilla protein powder can be incorporated for a protein boost. The bars are pressed into an 8x8 inch dish lined with parchment to maintain shape after freezing.

A chocolate topping made from melting semi-sweet chocolate chips with coconut oil is poured over the chilled bars, adding a smooth and slightly rich layer contrasting the chewy base. Freezing solidifies the bars, preserving their texture and making them easy to slice into individual servings.

These bars serve well as a handheld snack or quick energy source. Individually wrapping portions after slicing helps keep them fresh in the freezer.

Notes suggest crushing cornflakes thoroughly for better binding and wrapping bars individually before storage. This helps maintain freshness and portion control.

Ingredients

Servings

For the Bars:

  • 1/3 cup peanut butter 80g
  • 1/4 cup maple syrup pure maple syrup, or extra honey, sugar free, 60g
  • 1/4 cup honey 80g
  • 1/4 cup vanilla protein powder optional, 30g
  • 2 cups corn flakes about 3 cups before crushed, crushed, 90g

For the Chocolate Topping:

  • 3/4 cup chocolate chips semi-sweet (120g
  • 1 tsp coconut oil

Instructions

  1. Line an 8x8” dish with parchment paper. Set aside.
  2. In a large microwave-safe bowl, add the peanut butter, maple syrup and honey. Microwave for 30 seconds and stir until everything is well-combined. Stir in the protein powder if using.
  3. Fold in the corn flakes until they’re all coated then transfer the mixture to the prepared dish. Make sure to press the mixture down well so it stays together after frozen (I used a piece of parchment paper sprayed with nonstick cooking spray to do this).
  4. Melt chocolate chips and coconut oil in a microwave safe bowl in 30 second intervals, stirring in between, until melted. Then pour evenly over top and smooth out with a rubber spatula.
  5. Freeze for 30 minutes then slice and enjoy!

Notes

  • Crushing cornflakes finely improves the bars' ability to hold together; using a mallet or rolling pin inside a sealed bag works well.
  • After the chocolate topping sets, slice bars and wrap portions individually to store in a freezer-safe bag for convenience and freshness.
