Ingredients
For the Bars:
- 1/3 cup peanut butter 80g
- 1/4 cup maple syrup pure maple syrup, or extra honey, sugar free, 60g
- 1/4 cup honey 80g
- 1/4 cup vanilla protein powder optional, 30g
- 2 cups corn flakes about 3 cups before crushed, crushed, 90g
For the Chocolate Topping:
- 3/4 cup chocolate chips semi-sweet (120g
- 1 tsp coconut oil
Instructions
- Line an 8x8” dish with parchment paper. Set aside.
- In a large microwave-safe bowl, add the peanut butter, maple syrup and honey. Microwave for 30 seconds and stir until everything is well-combined. Stir in the protein powder if using.
- Fold in the corn flakes until they’re all coated then transfer the mixture to the prepared dish. Make sure to press the mixture down well so it stays together after frozen (I used a piece of parchment paper sprayed with nonstick cooking spray to do this).
- Melt chocolate chips and coconut oil in a microwave safe bowl in 30 second intervals, stirring in between, until melted. Then pour evenly over top and smooth out with a rubber spatula.
- Freeze for 30 minutes then slice and enjoy!
Notes
- Crushing cornflakes finely improves the bars' ability to hold together; using a mallet or rolling pin inside a sealed bag works well.
- After the chocolate topping sets, slice bars and wrap portions individually to store in a freezer-safe bag for convenience and freshness.
