Peanut Butter Crunch Brownies
Description
These brownies begin with a batter made from melted butter, baking chocolate, sugar, eggs, vanilla, salt, baking powder, and flour. After baking, a peanut butter layer is spread over the warm brownies and allowed to set. Meanwhile, chocolate chips are melted with butter and mixed with Rice Krispies cereal to form a crunchy chocolate topping.
The layering provides a dense, moist brownie base contrasted by a creamy peanut butter middle and a crisp chocolate-cereal top. The varied textures complement each other while delivering sweet, chocolatey, and nutty flavors.
This dessert is served chilled to allow the topping to set and is suitable as a rich treat. Adjusting the amount of Rice Krispies can increase the crunch. Cooling the peanut butter layer in the freezer can speed up the setup before applying the cereal topping.
Ingredients
Brownies
- 5 tablespoons butter melted, salted
- 3 ounces baking chocolate melted
- 1 cup granulated sugar
- 2 large egg
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 1/2 teaspoons vanilla extract
- 3/4 cup all-purpose flour
Peanut Butter Crunch Topping
- 1 cup peanut butter creamy
- 1 1/2 cups chocolate chips semi-sweet
- 1 tablespoon butter melted
- 1 cup Rice Krispies cereal
Instructions
- Preheat your oven to 350 degrees and spray a 9x9 glass pan with nonstick cooking spray or line with parchment paper.
- In a large mixing bowl, use a hand mixer to mix together melted butter, melted chocolate, and sugar. Add in the eggs, and vanilla and mix until combined.
- Add in salt, baking powder, and flour and mix until just combined.
- Pour the brownie batter into the prepared pan and bake for 20 to 25 minutes. Remove from oven and spread peanut butter on top. Let cool 1 hour.
- In a microwave-safe mixing bowl, melt chocolate chips with butter in 15 second increments in the microwave, stirring in between, until chocolate is melted and smooth. Stir in rice krispie cereal.
- Spread chocolate mixture on top of peanut butter layer. Transfer pan to the fridge and allow to cool completely until set, about 30 minutes.
Notes
- For extra crunch, increase the Rice Krispies cereal in the topping to 1 1/2 cups.
- Speed up cooling of the peanut butter layer by placing the pan in the freezer for a few minutes before adding the crisp topping.
