Peanut Butter Cup Cheesecake Brownies

Peanut Butter Cup Cheesecake Brownies are a heavenly combination of fudgy brownies, silky cheesecake, and, to top it all off, Reese's peanut butter cups. Prepare to make batch after batch of these peanut butter brownies!

Ingredients

Brownie Ingredients

  • 1 brownie mix box
  • 1/3 cup of oil
  • 1 cup of water
  • 2 egg
  • 8 ounces cream cheese softened
  • 2 tablespoons butter
  • 1/4 cup peanut butter
  • 1 sweetened condensed milk Eagle brand; 14 ounces; canned
  • 1 tablespoon corn starch
  • 1 egg
  • 1 teaspoon of vanilla
  • 2 cups Reese's peanut butter cups chopped

Topping Ingredients

  • 1 3/4 cups milk chocolate chips
  • 1/4 cup peanut butter
  • 1/2 cup Reese's Pieces to sprinkle on top
  • 1/4 cup peanut butter to drizzle on top

Instructions

Brownie Directions

  1. Heat the oven to 350 degrees.
  2. In the mixing bowl of a stand mixer, place the brownie mix, 1/3 cup of oil, 1 cup of water, and 2 eggs, and blend on low until all ingredients are well blended.
  3. Turn mixer on high, and mix for 1 minute.
  4. Scrape down the sides of the mixing bowl ad blend any unmixed ingredients.
  5. Line the bottom and sides of a 9 X 13 baking dish with parchment paper.
  6. Pour the Brownie batter into the dish, and set aside.
  7. Rinse out the mixing bowl, and add the cream cheese, butter, peanut butter and vanilla, and mix until well blended, smooth and creamy.
  8. Add the sweetened condensed milk, egg, and cornstarch, and blend until well mixed.
  9. Remove the bowl from the mixer, and add the chopped peanut butter cups, gently folding them into the cream cheese mixture.
  10. Pour the cream cheese mixture on top of the brownie batter, and place in the oven for 45 - 50 minutes, or until a toothpick inserted in the center comes out clean.

Topping Directions

  1. Remove from oven to a wire rack to cool.
  2. Cover with foil, and place in refrigerator overnight.
  3. The next day, place the chocolate chips, and 1/4 cup of peanut butter in the microwave at 10 second intervals, stirring between melting, and melt completely.
  4. Stir until smooth, and pour over top of cheesecake/brownies, and smooth with a frosting spatula.
  5. Melt the additional 1/4 cup of peanut butter in the microwave, and drizzle over the top of the chocolate.
  6. Swirl with a knife.
  7. Generously sprinkle Reese's pieces over the top of the brownies, and place back in the refrigerator until the chocolate is set.
  8. When time to serve, cut in 2 x 3 pieces.
