Peanut Butter Cup Cookies

These Peanut Butter Cup Cookies combine classic cookie dough with miniature peanut butter cups for a rich, chewy treat accented by the candy’s creamy center. The dough includes butter, brown and white sugar, peanut butter, and vanilla, producing a tender yet flavorful base. Rolling the dough balls in sugar before baking adds a subtle crispness to the edges. Once baked, the cookies are topped with a pressed-in peanut butter cup, providing a delightful contrast in texture and intensified peanut butter taste.

Description

Peanut Butter Cup Cookies feature a soft cookie dough enriched with creamy peanut butter and a mix of sugars that give the dough a balanced sweetness and tender bite. The dough is chilled before baking to ensure it holds its shape and develops the right texture. After baking until lightly golden but still soft, miniature peanut butter cups are pressed into the warm cookies, melting slightly to meld with the dough. The outer roll in sugar lends a faint crunch that contrasts with the soft cookie interior and the melting candy. These cookies blend the familiar flavor of peanut butter with the sweetness of candy cups in a handheld treat.

The cookies can be served as a snack or dessert and make good takeaway treats. Their moderately sweet flavor balances well with milk or coffee. The preparation can be segmented into making dough in advance and baking in batches as needed.

To vary decoration, you can melt chocolate and pipe legs and attach candy eyes to create themed cookies. The dough also freezes well before baking, allowing for future baking sessions without compromising quality.

Ingredients

Servings
  • 1/2 cup butter softened
  • 1/2 cup light brown sugar
  • 1/2 cup white sugar
  • 1 large egg
  • 1/2 cup peanut butter creamy
  • 2 Tablespoons milk
  • 1 teaspoon vanilla
  • 1 3/4 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 36 peanut butter cups miniature
  • 1/4 cup sugar

Instructions

  1. Pre-heat oven to 375 degrees F.
  2. Using a stand mixer fitted with the paddle attachment, cream butter, brown sugar and 1/2 cup white sugar until blended, light and creamy, about 3 minutes.
  3. Add egg, 1/2 cup peanut butter, milk and vanilla, and beat until well blended, 1-2 minutes.
  4. In a medium sized bowl, mix flour, salt and baking soda. Slowly add flour mixture to butter and sugar, just until dough comes together. Don't over mix. For best results chill dough 30 minutes, or over-night.
  5. Roll dough into walnut-sized balls, about 1 Tablespoon. Or weigh the dough and divide the measurement by 36 for uniform cookies. Cookie dough can also be frozen at this stage.
  6. Roll each ball additional sugar, then place on cookie sheets lined with parchment or silpat.
  7. Bake at 375 degrees F. for 10-12 minutes, until light golden brown, but still soft.
  8. Remove from oven. Allow the cookies to cool about 3 minutes then place a peanut butter cup in the center of each cookie, pressing down slightly.

Notes

  • Chill dough for at least 30 minutes or overnight to improve texture and shape retention.
  • Roll dough balls in sugar before baking for a pleasant crisp edge.
  • Press miniature peanut butter cups into warm cookies after baking to slightly melt them into the cookie.
  • Dough balls can be frozen before baking to extend storage time or prep ahead.
  • For themed cookies, melt chocolate and pipe details such as legs and eyes on the candy topping; chill to set.
