Peanut Butter Eggs (Reese's Copycat)
Description
The Peanut Butter Eggs begin by creaming together softened cream cheese and butter until smooth before adding creamy peanut butter. Powdered sugar is beaten in to create a thick, sweet filling that is portioned into bite-sized egg shapes. These are frozen briefly to firm up for dipping.
Separately, melting chocolate or almond bark is microwaved until smooth, then used to coat the frozen peanut butter eggs. Excess chocolate is shaken off and sprinkles can be added immediately for decoration. Once the chocolate sets, the eggs are ready to serve.
Using melting chocolate or almond bark ensures easier melting and better coating consistency than chocolate chips. The recipe allows using milk, white, or dark coatings depending on preference and color contrast. These treats work well for Easter or other celebrations requiring a peanut butter chocolate confection.
Ingredients
- 8 ounce cream cheese softened
- 1/2 cup butter softened
- 18 ounce peanut butter creamy, jar
- 2 pounds powdered sugar
- 1 pound melting chocolate (or chocolate almond bark)
- 1 pound white melting chocolate (or white almond bark)
- Sprinkles optional, Easter variety
Instructions
- In a large bowl using an electric or stand mixer, beat cream cheese and butter until smooth. Add in the peanut butter until combined.
- Beat in the sugar until well mixed. I use a 1 ½ tablespoon scoop to make balls that I form into an egg shape. Place the eggs on a wax or parchment paper lined baking sheet and freeze for about 30 minutes.
- In a microwave-safe bowl in 30 second increments melt the chocolate and the white chocolate separately until melted and smooth.
- When the chocolate is ready using 2 forks dip the eggs and cover in chocolate gently shaking off the excess. Place the dipped egg back on the wax or parchment paper and immediately add sprinkles if desired. Let harden and serve!
Notes
- Choose melting chocolate or almond bark over chocolate chips for easier melting and smoother coating.
- Milk, white, and dark melting chocolates all work well and can be combined for visual effect.
- Follow package instructions for melting chocolate carefully to avoid burning or seizing.
