Peanut Butter Fudge
Description
Peanut Butter Fudge starts by melting together creamy peanut butter and unsalted butter on medium heat until warm and combined. Removing from heat, sifted powdered sugar and vanilla extract are stirred in until smooth with no lumps. Pouring the mixture into a lined baking dish and cooling it at room temperature or in the refrigerator solidifies the fudge into a firm sweet treat.
The resulting fudge is creamy and slightly dense with a rich peanut flavor that stands out without being overly sweet. Cutting into one-inch squares makes portioning easy, and using parchment paper allows for clean removal from the pan. This classic no-bake dessert is straightforward and satisfying.
For sharper cuts, a warm knife wiped clean between slices helps create neat pieces. Optional additions like sea salt or chocolate chips can be incorporated for variations. Store the fudge in an airtight container at room temperature or chilled for longer freshness.
Accuracy in measuring powdered sugar is important to avoid graininess. Cooling at room temperature generally takes several hours, but refrigeration reduces this time to about one hour.
Ingredients
- 1 cup peanut butter 250g, creamy
- 1 cup butter 226g, unsalted
- 2 teaspoons vanilla extract
- 3 cups powdered sugar sifted (360g)
Instructions
- Lightly grease an 8-inch square baking dish with butter and line with parchment paper or aluminum foil.
- In a medium saucepan, combine the peanut butter and unsalted butter, then place over medium heat. and bring to a boil, stirring occasionally.
- Once boiling, remove from heat and stir in the powdered sugar and vanilla until smooth and no lumps of sugar remain. (If desired, also add ¼ teaspoon of salt.)
- Pour the fudge into the prepared baking dish and spread it out with a spatula. Let cool at room temperature for several hours or refrigerate until set, about 1 hour.
- Once cooled, remove the fudge from the pan using the parchment paper to lift it out, then cut it into 1-inch squares. The fudge can be stored in an airtight container at room temperature for up to a week or in the fridge for up to 1 month.
Notes
- Use a food scale for precise powdered sugar measurement to prevent grainy texture.
- Cool fudge until firm at room temperature or refrigerate for faster setting.
- Use a warm, clean knife for neat, smooth cuts when slicing fudge.
- Optional: Add ¼ teaspoon fine sea salt for a salty contrast or fold in chocolate chips before setting.
