Description
Peanut Butter Greek Yogurt Bites are made by mixing full-fat Greek yogurt with peanut butter powder, natural peanut butter, and maple syrup to form a smooth mixture. This mixture is portioned onto a lined tray and frozen until firm. After solidifying, each bite is dipped into a melted blend of dark chocolate chips and coconut oil, then topped with flaky sea salt before chilling again to set the chocolate coating. The result is a creamy, peanut-flavored inside encased in a crisp chocolate shell. These bites keep well refrigerated and serve as a portion-controlled treat that balances protein and sweet flavors.
Ingredients
- ½ cup Greek yogurt full fat
- ¼ cup peanut butter powder (PB Fit, PB2 or Clean Simple Eats powdered peanut butter)
- 1 Tablespoon peanut butter
- ½ tablespoon maple syrup
- ½ cup dark chocolate chips Lily's brand
- 1 teaspoon coconut oil

Instructions
- Add Greek yogurt, pb powder, peanut butter and maple syrup to a bowl. Stir to combine.
- Scoop mixture onto a parchment lined plate or small baking tray. I used a medium cookie scoop, which made 6 bites.
- Place bites in the freezer for about 10-20 minutes or until solid to the touch.
- Melt chocolate chips with coconut oil. Dip each yogurt bite into the melted chocolate to coat. Sprinkle with flaky sea salt and place in the fridge for the chocolate to set and enjoy. Store bites in the fridge for 3-4 days.
