Peanut Butter Mousse
Description
Peanut Butter Mousse starts by whipping heavy cream until stiff peaks form, providing a light and airy base. Separately, mascarpone cheese, peanut butter, monk fruit sweetener, and vanilla extract are combined until smooth.
The whipped cream is gently folded into the peanut butter mixture in stages to maintain volume and prevent deflating. Once combined, the mousse is chilled to help it set and develop a firm but creamy consistency.
The finished dessert offers a balance of richness from mascarpone and peanut butter, sweetness from the sugar substitute, and lightness from the whipped cream. It can be served as is or garnished with additional peanut butter drizzle, chopped peanuts, or sugar-free chocolate for texture contrast.
Mascarpone can be substituted with cream cheese if needed, noting that nutritional content will differ. Monk fruit sweetener can be replaced with similar granular sugar substitutes suitable for baking. Chilling the mousse before serving improves the mouthfeel and firmness.
Ingredients
- 6 ounces mascarpone cheese
- ⅔ cup heavy whipping cream
- ⅓ cup peanut butter or other sugar-free peanut butter, brand Crazy Richard’s, creamy
- ⅓ cup Monk Fruit Sweetener powdered, or allulose
- 1 teaspoon vanilla extract
Instructions
- Add the heavy cream to a mixing bowl and whip using a hand mixer, until you have stiff peaks, then set aside.
- In another bowl, add in the remaining ingredients and mix until well combined.
- Fold in the whipped cream in 3 additions and keep folding until you have no streaks remaining.
- Chill in the fridge for at least 20 minutes and serve.
- Optional: Top with a drizzle of peanut butter, chopped peanuts and/or grated sugar-free chocolate.
Notes
- If mascarpone cheese is unavailable, cream cheese can be used as a substitute, though this will change the texture and nutrition slightly.
- Monk fruit sweetener can be replaced with allulose or Swerve confectioners sugar if necessary for sweetness.
