  • cup heavy whipping cream
  • cup peanut butter or other sugar-free peanut butter, brand Crazy Richard’s, creamy
  • cup Monk Fruit Sweetener powdered, or allulose
  • 1 teaspoon vanilla extract

Instructions

  1. Add the heavy cream to a mixing bowl and whip using a hand mixer, until you have stiff peaks, then set aside.
  2. In another bowl, add in the remaining ingredients and mix until well combined.
  3. Fold in the whipped cream in 3 additions and keep folding until you have no streaks remaining.
  4. Chill in the fridge for at least 20 minutes and serve.
  5. Optional: Top with a drizzle of peanut butter, chopped peanuts and/or grated sugar-free chocolate.

Notes

  • If mascarpone cheese is unavailable, cream cheese can be used as a substitute, though this will change the texture and nutrition slightly.
  • Monk fruit sweetener can be replaced with allulose or Swerve confectioners sugar if necessary for sweetness.
