Peanut Butter Oatmeal Chocolate Chip Cookie Bars
Description
To make Peanut Butter Oatmeal Chocolate Chip Cookie Bars, softened butter and sugars are creamed together until light, followed by the addition of creamy peanut butter, eggs, and vanilla extract. Dry ingredients including flour, rolled oats, shredded coconut, salt, and baking soda are whisked separately, then mixed into the wet ingredients. Chocolate chips are folded in last. The mixture is pressed evenly into a lined 9x13 inch pan and baked at 350 degrees Fahrenheit for 20–25 minutes.
Once removed from the oven, coarse sea salt is sprinkled immediately on the warm bars, introducing a subtle salty contrast that highlights the sweetness and chocolate. After cooling completely, the bars are cut into squares. The resulting bars have chewy oat texture, creamy chocolate chunks, and a nutty peanut butter flavor, balanced by the slight crunch of coconut and sea salt.
They can be stored at room temperature in an airtight container, making them convenient snacks or dessert bars. This versatile recipe can be customized by adding nuts, white chocolate chips, or colorful candies according to preference.
