Description
This recipe uses a simple mix of eggs, peanut butter, and pure maple syrup as the base, creating a smooth batter easily blended. Rolled oats, baking soda, cinnamon, and sea salt are stirred in to form a thick dough. Vanilla extract and chocolate chips are optional but add flavor and indulgence.
The batter is pressed into a parchment-lined pan and baked at 350°F until set and edges are lightly browned. The bars develop a firm, chewy texture from the peanut butter and oats, complemented by the sweetness and slight crunch of chocolate chips when used.
After baking, cooling the bars for at least 15 minutes before slicing ensures they hold shape. They can be enjoyed as a snack or portable treat and stored in the refrigerator up to a week or frozen for longer preservation.
Reheating chilled bars briefly softens their texture. Wrapping the baking pan with plastic wrap allows storing at room temperature safely for short periods.
Ingredients
- 2 egg
- 1 cup peanut butter
- ⅓ cup pure maple syrup
- 1 tsp vanilla extract optional
- 1 ½ cups rolled oats
- ¼ tsp baking soda
- 1/2 tsp ground cinnamon optional
- 1/2 tsp salt sea salt
- 1 cup chocolate chips optional
Instructions
- Preheat the oven to 350 degrees Fahrenheit and line an 8-inch square pan with parchment paper.
- Combine the eggs, peanut butter, and pure maple syrup (and vanilla extract if adding) in a large bowl and mix until everything is well combined. Note: if your peanut butter is cold or seems firm, microwave it for 20 to 30 seconds to help with the mixing process.
- Add the rolled oats, baking soda, ground cinnamon and sea salt (dry ingredients) to the mixing bowl and mix until everything is combined and a thick dough forms.
- Stir in the chocolate chips (if adding).
- Transfer the peanut butter oatmeal cookie dough to the prepared baking pan and spread it into an even layer. If you’d like, sprinkle the top with extra chocolate chips and/or flaky sea salt.
- Bake on the center rack of the preheated oven for 20 to 25 minutes or until the bars have set up and the edges are slightly golden brown.
- Allow the peanut butter chocolate chip bars to cool for at least 15 minutes before slicing and serving.
Notes
- Store finished bars in an airtight container in the refrigerator for up to one week.
- Freeze bars wrapped in a large zip lock bag for up to three months for longer storage.
- If storing for a couple of days, wrapping the baking pan tightly and leaving bars on the counter is acceptable.
