This recipe starts by blending creamy peanut butter, powdered sugar, peanut butter powder, and softened unsalted butter until a stiff dough forms. Each peanut butter ball is placed atop a snap pretzel, then another pretzel is pressed on top to create a sandwich bite. These bites are chilled for 30 to 60 minutes until the filling firms up, which helps maintain shape during dipping and eating.

Chocolate chips and vegetable oil are melted together in the microwave in intervals to create a smooth coating used for dipping or drizzling over the pretzel bites. White chocolate and optional sprinkles can be added for visual contrast and extra sweetness.

  • 1 cup (248g) peanut butter not natural it's too runny, creamy
  • 2 cups (240g) powdered sugar
  • 6 Tbsp (34g) peanut butter powder
  • 6 Tbsp (85g) unsalted butter at room temperature
  • 170 (approx.) pretzels snap
  • 1 1/2 cups (9 oz.) chocolate chips good quality so they melt well, semi-sweet
  • 1 tsp vegetable oil
  • 8 oz. white chocolate chopped
  • Sprinkles (optional)

Instructions

  1. To a large mixing bowl add peanut butter, powdered sugar, peanut butter powder and butter. Blend mixture on low to start bring together then increase to medium and blend until combined. If needed you can thin it with a little more peanut butter or thicken with powdered sugar, it should feel like a pretty stiff cookie dough and shouldn't be runny or sticky.
  2. Line two baking sheets with parchment paper. Scoop out 1 even teaspoon at a time and roll into balls. This process will go faster if you've got someone to help, one person scoops the other person rolls.
  3. Place peanut butter ball over 1 pretzel then smash a second pretzel over the top. Place them on the baking sheet.
  4. Refrigerate until filling is fairly firm, about 30 to 60 minutes.
  5. Place chocolate chips in a medium microwave safe bowl along with the vegetable oil. Heat in microwave on 50% power in 30 second intervals. Stir well between each until chocolate is melted. Note that the last time heating you may only need 15 seconds or so, careful not to overheat it or it can seize.
  6. Remove one baking sheet of the peanut butter stuffed pretzels from fridge. Dip the pretzels halfway in the chocolate then remove and shake and scrape excess chocolate underneath off along the side of the bowl.
  7. Cover with sprinkles if using.
  8. Melt white chocolate in a microwave safe bowl in the microwave on 50% power in 30 second intervals stirring well between each until melted and smooth.
  9. Repeat dipping process with white chocolate and cover with sprinkles. Transfer to fridge for chocolate to set, about 15 minutes.

Notes

  • Use powdered peanut butter in the filling for stronger peanut butter flavor; substitute with extra powdered sugar if unavailable, but expect sweeter, less peanut flavor.
  • Store completed Peanut Butter Pretzel Bites refrigerated for up to 2 weeks to preserve freshness and texture.
