Peanut Butter Ritz Cookies

Peanut Butter Ritz Cookies are sandwich-style treats made by spreading creamy peanut butter between two buttery salted crackers and then dipping the assembled cookies into melted chocolate almond bark. Once coated and set, these cookies offer a mix of salty, sweet, and creamy textures. The combination of crunchy crackers, smooth peanut butter, and firm chocolate coating provides a chewy, rich bite suitable for snack time or dessert.

Description

These Peanut Butter Ritz Cookies start with simple buttery, salted crackers that are layered with a healthy dollop of creamy peanut butter, then sandwiched with another cracker to form a cookie. The sandwich is coated in melted chocolate almond bark, which hardens into a firm shell encasing the peanut butter center. The preparation involves spreading peanut butter evenly on crackers before assembling and dipping each sandwich cookie by hand.

The chocolate layer adds sweetness and a smooth finish, contrasting nicely with the saltiness of the crackers and richness of the peanut butter filling. The recipe yields many cookies, making it handy for gatherings or storing for later treats.

These cookies can be stored in an airtight container and freeze well. Adding layers of wax paper between cookies prevents sticking when stacking after dipping.

Ingredients

Servings
  • 100 crackers such as Ritz, round buttery salted
  • 1 ½ cup peanut butter creamy
  • 24 ounces chocolate almond bark

Instructions

  1. Place about a 1/2 - 1 Tablespoon of peanut butter on a cracker and spread out depending on the ratio of peanut butter to crack and chocolate you desire.
  2. Top with another cracker. Repeat process until all crackers are gone.
  3. Melt almond bark in a double boiler until all lumps are out. If you don’t have a double boiler you can do this in the microwave, making sure to stir frequently so it doesn’t scorch. It just doesn’t harden up if you use the double boiler.
  4. Drop a sandwich cookie into the chocolate. Make sure it’s covered, then remove with a fork. Drag fork along the edge of the double boiler to scrape of excess almond bark. Place cookie on wax paper. Repeat until all cookies have been dipped.
  5. Place in container and store in air tight container. These also freeze great! Place wax paper between the layers of cookies.
