  • 1/2 cup granulated sugar plus more for rolling cookies
  • 1/2 cup light brown sugar packed
  • 1/2 cup peanut butter creamy
  • 1/2 cup butter unsalted, softened
  • 1 egg
  • 1 1/2 cups all-purpose flour
  • 3/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt

for the peanut butter filling

  • 6 tbsp peanut butter creamy
  • 2 cup powdered sugar
  • 2 tsp vanilla extract
  • 4 Tbsp milk or cream, plus a little more if needed
  • salt pinch

Instructions

  1. Preheat oven to 375F, and line a cookie sheet with parchment paper.
  2. In a stand mixer, or with electric beaters, cream together the sugar, brown sugar, peanut butter, softened butter, and egg until smooth.
  3. Add the flour, baking soda, baking powder, and salt, and fold together until there are no streaks of flour left.
  4. Scoop the dough into 1 tablespoon-sized balls, and roll in sugar. Place on the prepared baking sheet, leaving 2 inches of space between all the cookies.
  5. Bake for 8 minutes. The cookies will still look fairly pale and be puffy. Allow to cool for a few minutes on the baking sheet before transferring to a cooling rack to fully cool.
  6. While the cookies are cooling, make the filling by adding all of the filling ingredients to a bowl and mixing together with the back of a fork (you can also use a stand mixer for this if you prefer) until creamy and smooth.
  7. To assemble the cookies, place a generous amount of the filling onto the back of one peanut butter cookie (about 1 tablespoon), and then sandwich with a second cookie, pressing lighting together.
