Peanut Butter Snowballs Recipe
Description
Combining creamy peanut butter, melted butter, vanilla extract, powdered sugar, and graham cracker crumbs produces a dense, pliable dough to shape into small balls. Chilling the dough firms it up for easier handling. After shaping, the balls freeze to maintain form when dipped in melted white chocolate. The coating process, done quickly, prevents melting and allows a neat chocolate shell to form. Sprinkles add a decorative touch before the chocolate hardens.
These confections work well as holiday treats or gifts, providing a balance of peanut butter richness with the smooth sweetness of white chocolate. Serving them at room temperature allows the chocolate to soften slightly while maintaining structure.
Using Ghirardelli melting wafers is advised for consistent melting; other brands may require added butter to ensure a smooth coating. These snowballs keep stored in airtight containers on the counter, refrigerated, or frozen to extend freshness and accommodate advance preparation.
Ingredients
- 1 1/2 cups peanut butter creamy
- 2 cups powdered sugar
- 1/3 cup butter melted
- 3/4 cup graham cracker crumbs
- vanilla extract
- 1 Cup white chocolate melting wafers
- Sprinkles for garnish
Instructions
- Combine the peanut butter, butter, and vanilla extract in a large mixing bowl. Using a hand mixer, beat until well combined.
- Beat in the powdered sugar and graham cracker crumbs.
- Cover with saran wrap and place in the refrigerator for 30 minutes.
- Remove from the refrigerator and scoop small Tablespoon size portions and roll into balls.
- Repeat until all the dough has been made into balls.
- Cover with seran wrap and place into the freezer for 1 hour or overnight.
- Place the melting chocolate in a microwave safe bowl and place in the microwave for 30 seconds, remove and stir if needed, repeat until the chocolate is melted and smooth.
- Place a cooling rack on a cookie sheet, or line wax paper.
- Use a fork and carefully dip each peanut butter ball into the melted chocolate, working quickly so the balls don't get too soft. Place onto parchment paper.
- Sprinkle with the sprinkles as you go along so the chocolate doesn't harden.
- Let harden before serving.
Notes
- Freeze the peanut butter balls for at least one hour before dipping in chocolate to help them retain shape.
- Use Ghirardelli melting wafers for best results; other brands might need extra butter per cup of chocolate.
- Add sprinkles before the chocolate hardens to ensure they stick properly.
- Store in airtight containers on the counter for up to 5 days, refrigerated up to 2 weeks, or freeze for up to 3 months.
- These make excellent gifts and party treats, especially around Christmas time.
