Peanut Butter Stuffed Dates
Description
Peanut Butter Stuffed Dates start with pitted Medjool dates sliced carefully without cutting through to hold the filling. Each date is filled with peanut butter, then dipped halfway in melted vegan chocolate for a smooth coating. Adding chopped peanuts and a sprinkle of sea salt provides texture and a flavor balance between sweet and savory. After freezing for at least an hour, the dates firm up into a sweet, rich snack. The chocolaty peanut butter compliments the chewy, sticky texture of the dates, delivering a satisfying bite.
The chocolate-coated dates are well-suited for serving frozen as a cool treat or partially thawed for a softer bite. Their compact size makes them handy for portion control or party snacks.
Storing these stuffed dates in the refrigerator keeps them fresh for up to a week sealed in an airtight container. For longer storage, freeze them in a suitable container for 1 to 2 months. Before serving frozen dates, letting them sit briefly at room temperature or overnight in the fridge will soften the texture for easier eating.
