  • 1/4 cup almond butter
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil melted
  • 1 teaspoon vanilla extract

Coating:

  • 12 ounces dark chocolate chopped
  • 1 tablespoon coconut oil
  • salt optional, sea salt

Instructions

  1. Preheat the oven to 350 degrees F. Line an 8×8 inch baking dish with parchment paper and set aside.
  2. In a bowl, mix the crust ingredients until combined. Press the mixture into the prepared baking dish.
  3. Bake for 10-12 minutes, or until lightly golden.
  4. Place a small saucepan over medium heat, and combine the filling ingredients. Stir constantly and bring to a gentle boil. Cook for 2-3 minutes, then remove from the heat.
  5. Pour the peanut butter mixture over the crust and freeze for one hour, or until firm.
  6. Transfer the contents from the baking dish onto a cutting board and using a sharp knife cut into 16 bars.
