Peanut Noodles

Peanut Noodles combine al dente spaghetti with a creamy sauce made from toasted sesame oil, peanut butter, soy sauce, and a touch of cider vinegar and sugar for balance. Fresh ginger and green onions add zest and aroma, while red pepper flakes provide a mild heat, resulting in a flavorful noodle dish with a rich, nutty sauce that can be served warm or room temperature.

Description

This noodle dish begins with spaghetti cooked to al dente before being tossed in a sauce prepared by gently heating toasted sesame oil with white parts of sliced green onions and minced fresh ginger. The sauce base blends creamy peanut butter with low-sodium soy sauce, hot water to loosen, cider vinegar for acidity, sugar for subtle sweetness, and crushed red pepper flakes for a hint of spice.

The heat allows the flavors to meld, resulting in a smooth sauce that coats the noodles evenly. Garnishing with sliced green parts of green onions and optionally crunchy peanuts adds freshness and texture. The balanced combination of nutty richness, tang, and mild spice makes these noodles versatile for casual meals.

Leftover noodles can be stored in an airtight container and reheated gently or enjoyed cold, providing convenient options for lunch or light dinners.

Using fresh ginger is recommended for optimal aroma and flavor, and it can be frozen for preservation if not used frequently.
