  • 125 ml water 0.5 cup
  • 250 g pea frozen, 8.8oz
  • parsley small handful, roughly chopped
  • 1 tbsp olive oil
  • 1 tbsp lemon juice or to taste
  • salt
  • 4 bread toasted, thick slices
  • 3 tbsp sesame seeds toasted
  • 3 tbsp chopped pistachio nuts
  • Extras for topping tomatoes and cress olive oil for drizzling

Instructions

Make the pea paste

  1. Add the water to a pot along with the peas and cook for about 2.5 min until the peas are soft.
  2. Reserve 1 tbps of the cooking water, discard the rest and let the peas cool slightly.
  3. Transfer the peas into a food processor along with the reserved liquid and the parsley and whiz into a rough paste.
  4. Transfer the pea paste into a bowl and mix in the olive oil and lemon juice and season to taste.

Make the peas on toast:

  1. Assemble the peas on toast, starting with the bread, then the peas paste, then the sesame seeds and nuts, any extras and a drizzle of olive oil.
