Pecan Chewies Recipe

Pecan Chewies are soft, dense bar cookies combining melted butter, brown and granulated sugars, eggs, vanilla, self-rising flour, and chopped pecans. Baked in a 9x13 dish until light brown, these bars have a chewy texture and a buttery, nutty flavor highlighted by vanilla and pecans, suitable for dessert or snack.

Description

This recipe for Pecan Chewies begins by melting butter and mixing it with granulated and brown sugars and vanilla extract, yielding a rich, sweet base. Eggs are then combined to add moisture and binding, followed by self-rising flour to provide structure. Chopped pecans incorporated into the batter add a nutty crunch throughout the soft, chewy bars.

Baked at a lower temperature (300°F) in a prepared 9x13 pan, the bars develop a light brown color with a firm but tender consistency. Allowing the bars to cool completely before cutting ensures clean slices and stability.

Pecan Chewies are suitable for serving as a handheld dessert or snack and can be made ahead for convenience.

Ingredients

Servings
  • 1 cup butter
  • 1 cup granulated sugar
  • 1 cup brown sugar packed
  • 2 1/2 /2 teaspoons vanilla extract
  • 2 large egg room temperature
  • 2 cups self-rising flour
  • 1 cup pecans chopped

Instructions

  1. Preheat oven to 300° F. Spray a 9x13 baking dish with nonstick cooking spray. Optionally, line the 9x13 baking dish with parchment long enough that the edges extend for easily lifting the Pecan Chewies from the baking dish for cooling and cutting.
  2. Melt butter in a medium saucepan set over medium heat. Once melted, pour the butter into a large mixing bowl and beat together with granulated, brown sugar, and vanilla extract until well combined. Mix in eggs until well combined, followed by the flour. Stir in the chopped pecans and pour into prepared 9 x 13 baking dish.
  3. Bake until the bars are light brown, about 45 minutes. Allow to cool completely before cutting and serving.
