Pecan Coconut Banana Bread Recipe
Description
Pecan Coconut Banana Bread blends ripe mashed bananas with vanilla yogurt and vegetable oil to create a moist base. The dry ingredients include all-purpose flour, granulated sugar, baking soda, salt, chopped pecans, and coconut flakes, stirred together and gently combined with the wet mixture to avoid overmixing and a dense texture.
The streusel topping, made from flour, brown sugar, butter, additional coconut flakes, and pecans, is sprinkled over the batter before baking. This results in a sweet, nutty crust contrasting with the soft inside. Baking in a greased loaf pan at 350°F yields a tender loaf with a clean toothpick test for doneness.
