Description

Crust

  • 1 1/2 cups all-purpose flour
  • 1/4 cup sugar
  • 1/8 teaspoon salt
  • 10 tablespoons butter cold and cut into pieces, unsalted
  • 1 egg yolk

Pecan Pie Filling

  • 1/2 cup brown sugar
  • 2 tablespoon all-purpose flour
  • 3/4 cup dark corn syrup
  • 3 egg
  • 1 teaspoon vanilla
  • 2 cups pecan halves

Instructions

  1. Heat oven to 400 degrees. Grease a 9-inch square pan.

Crust

  1. Put the flour, sugar, egg yolk, and salt in a food processor and pulse until blended. With the processor running, gradually add the butter through the feed tube and process until blended. 
  2. Turn out crust dough into prepared pan. Flatten and press evenly over the bottom of the pan, forming a ½ inch edge up the sides of the pan. Bake for 10 minutes.

Filling

  1. Stir brown sugar and flour in a medium bowl until blended.
  2. Add corn syrup, eggs, and vanilla. Whisk until well blended.
  3. Add pecans and stir to coat them with the mixture.
  4. Spread pecan filling in an even layer over the partially baked crust.
  5. Bake for an additional 20 minutes or until the pie filling sets.
