Ingredients
- 1 1/2 cups pecan halves
- 1 1/2 cups granulated sugar
- 6 tablespoons salted butter
- 3/4 cup brown sugar
- 1/2 cup milk
- 1 teaspoon vanilla extract

Instructions
- Preheat the oven to 350°F (175°C). Spread 1 1/2 cups pecan halves in an even layer on a baking sheet and toast for 8–10 minutes, stirring once halfway through, until fragrant. Set aside to cool slightly.
- Line a separate baking sheet with parchment paper and set aside.
- In a large saucepan, combine the toasted pecans, 1 1/2 cups granulated sugar, 6 tablespoons salted butter, 3/4 cup brown sugar, 1/2 cup milk, and 1 teaspoon vanilla extract. Stir briefly to combine.
- Place the saucepan over medium heat and cook the mixture without stirring until it begins to boil, about 5–7 minutes.
- Attach a candy thermometer to the side of the saucepan and cook, stirring occasionally, until the mixture reaches the soft ball stage (between 234°F and 240°F). This should take around 10–12 minutes. Be sure to scrape down the sides and bottom of the pan occasionally to prevent burning.
- Remove the saucepan from the heat. Stir the mixture vigorously until it thickens, loses its shine, and develops a matte finish, about 3–5 minutes.
- Using a spoon, drop spoonfuls of the mixture onto the prepared baking sheet, spacing them out slightly. Allow the pralines to cool completely, about 30 minutes, until firm.
- Once cooled, store the pralines in an airtight container at room temperature.
