  • 1 1/2 cups pecan halves
  • 1 1/2 cups granulated sugar
  • 6 tablespoons salted butter
  • 3/4 cup brown sugar
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Spread 1 1/2 cups pecan halves in an even layer on a baking sheet and toast for 8–10 minutes, stirring once halfway through, until fragrant. Set aside to cool slightly.
  2. Line a separate baking sheet with parchment paper and set aside.
  3. In a large saucepan, combine the toasted pecans, 1 1/2 cups granulated sugar, 6 tablespoons salted butter, 3/4 cup brown sugar, 1/2 cup milk, and 1 teaspoon vanilla extract. Stir briefly to combine.
  4. Place the saucepan over medium heat and cook the mixture without stirring until it begins to boil, about 5–7 minutes.
  5. Attach a candy thermometer to the side of the saucepan and cook, stirring occasionally, until the mixture reaches the soft ball stage (between 234°F and 240°F). This should take around 10–12 minutes. Be sure to scrape down the sides and bottom of the pan occasionally to prevent burning.
  6. Remove the saucepan from the heat. Stir the mixture vigorously until it thickens, loses its shine, and develops a matte finish, about 3–5 minutes.
  7. Using a spoon, drop spoonfuls of the mixture onto the prepared baking sheet, spacing them out slightly. Allow the pralines to cool completely, about 30 minutes, until firm.
  8. Once cooled, store the pralines in an airtight container at room temperature.
