  • 1 cup white onion 1 small onion, diced, or yellow onion
  • 2 teaspoons garlic about 2 cloves, minced
  • 1/2 teaspoon red pepper flakes crushed
  • 1 tablespoon basil dried
  • 1 (28 ounce can) crushed tomatoes
  • 1/2 cup vodka
  • 1 1/2 cups heavy cream
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 cup Parmesan Cheese divided, grated
  • 16 ounces penne pasta

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add in 1 cup diced white or yellow onion and saute for 5 minutes until soft and translucent.
  2. Add in 2 teaspoons minced garlic and 1/2 teaspoon crushed red pepper flakesSauté for about 1 minute until garlic becomes fragrant.
  3. Mix in 1 tablespoon dried basil1 (28 ounce can) crushed tomatoes, and 1/2 cup vodka. Increase the heat to medium-high and bring to a simmer. Continue simmering for about 10 minutes to allow the sauce to reduce and thicken slightly.
  4. Add in 1 1/2 cups heavy cream, 1 teaspoon salt, and 1 teaspoon black pepper. Simmer the sauce for an additional 5 minutes over medium-low heat.
  5. Turn off the heat and add 1/4 cup grated parmesan cheese to the sauce and stir until the cheese melts.
  6. Meanwhile, cook 16 ounces penne pasta according to package instructions until al dente. Before draining, reserve 1 cup pasta water.
  7. Add cooked penne pasta to the skillet and coat it well with the sauce. If sauce is too thick, add reserved pasta water to thin it out.
  8. Serve Penne alla Vodka hot, garnished with the remaining 1/4 cup grated parmesan cheese for sprinkling over top.
