Pennsylvania Dutch Funny Cake is a delicious and unexpected combination of buttery pie crust, rich chocolatey filling, and moist yellow cake.

Ingredients

  • 1 cup sugar , divided
  • 1/4 cup cocoa powder unsweetened
  • 3/4 cup milk divided, whole
  • 1 pie crust
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 large egg yolk
  • 1 tablespoon shortening
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium saucepan add 1/2 cup sugar and 1/4 cup cocoa powder.
  2. Whisk in 6 tablespoons milk until smooth.
  3. Cook on medium heat until little bubbles start to form.
  4. Cook for 2 minutes until thickened.
  5. Remove from heat.
  6. In a large mixing bowl add the remaining 1/2 cup sugar, flour, baking powder and salt and whisk well.
  7. In a measuring cup add the remaining 6 tablespoons milk, egg yolk, shortening and vanilla extract and whisk until combined.
  8. Add wet mixture to the flour mixture in the bowl and whisk to combine.
  9. Line a pie plate with pie crust.
  10. Add the cake mixture to the pie plate.
  11. Pour the chocolate mixture over the cake batter in a swirling pattern.
  12. Bake at 350 degrees for 45-50 minutes. If the edges brown before your pie is done, cover the edges in foil.
  13. Cool 15 minutes before serving (also great served cold).
