Peperonata Recipe
Description
The Peperonata recipe softens sliced bell peppers alongside tomatoes, onions, and garlic on medium-low heat for 30 minutes to an hour, depending on the desired tenderness. The combination cooks down into a stew-like consistency with fresh, vibrant colors from the peppers.
Seasoned simply with salt and pepper, it can be garnished with fresh basil and optionally complemented by a sprinkle of spicy chili flakes or a dash of balsamic vinegar for added depth.
This vegetable stew is versatile as a side dish or a topping for grilled meats, toasted bread, or pasta. Its sweet and slightly acidic profile adds brightness to many meals as a cooked vegetable accompaniment.
