Peppermint Bark Cookies

Ingredients

Servings
  • 1/2 C butter room temperature
  • 1/2 C light brown sugar packed
  • 1/2 C granulated sugar white
  • 3 egg large
  • 2 Tbsp light corn syrup
  • 1 Tbsp vanilla extract pure
  • 3 3/4 C all-purpose flour
  • 1 C cocoa powder
  • 1 Tbsp cornstarch
  • 2 tsp baking soda
  • 1 tsp kosher salt

Peppermint Frosting

  • 1 C butter unsalted, softened
  • 3 1/2 C powdered sugar
  • 1 tsp peppermint extract pure
  • 10 candy canes crushed

Instructions

  1. Preheat the oven to 350 degrees.
  2. Line the cookie sheets with parchment paper.
  3. Combine flour, cocoa, cornstarch, baking soda, and salt in a large bowl.
  4. Whisk to mix. Set aside
  5. Cream together in a large mixing bowl the butter, white, and light brown sugar using an electric mixer until it becomes light in color and fluffy.
  6. Add in the three eggs, pure vanilla, and corn syrup mixing until completely mixed.
  7. Continue beating while adding in the flour mixture until a soft cookie dough begins to form.
  8. With a large ice cream scooper, scoop dough into your hands and roll it into a ball
  9. Place on the cookie sheet about 2 in apart from the other dough
  10. Use your hands to flatten the dough into the same size circles.
  11. Bake at 350 degrees for 15-17 minutes.

Frosting

  1. Using a standing mixer, beat all ingredients except the candy canes until combined, creamy and thick
  2. Scoop into the piping bag
  3. Pipe a spiral onto the top of the cookies
  4. Sprinkle the crushed candy canes on top
  5. Allow frosting to harden slightly for about an hour before enjoying it!
