Description
This recipe creates a dense, velvety cheesecake base by mixing softened cream cheese, sugar, and peppermint extract to taste. The peppermint extract provides a refreshing mint flavor that defines the bars. For a holiday visual element, drops of red food coloring are gently swirled on top, and crushed candy canes may be sprinkled for texture and added sweetness.
The mixture is poured into a lined pan and chilled in the refrigerator for one to two hours until firm enough to cut into bars. The texture is creamy and dense, unlike a baked cheesecake, as this is a no-bake preparation requiring only chilling.
These bars are suitable as a seasonal treat or dessert, especially around the holidays, offering a minty twist on cheesecake flavors. They are easy to prepare and can be stored chilled until needed for serving.
Ingredients
- 1 1/2 cups butter softened
- 20 oz cream cheese softened
- 1 1/2 cups sugar
- 2 1/2 tsp peppermint extract

- red food coloring (optional)
Instructions
- With a hand mixer, blend all ingredients together until smooth. Add additional peppermint extract as desired.
- Pour mixture into an 8x8 pan lined with wax or parchment paper (make sure paper is overflowing on the sides, for easy removal).
- For red swirls, put 3-5 drops of red food coloring on the top of the cheesecake and swirl using a knife.
- To decorate, swirl drops of red food coloring with a knife. You may also sprinkle bits of candy cane over the top of the cheesecake.
- Chill in the fridge for at 1-2 hours.
- Use the hanging paper to remove cheesecake from the pan.
- Cut into bars and serve.
