Perfect Blackberry Cobbler

Perfect Blackberry Cobbler features a thickened, spiced blackberry filling topped with a tender, buttery biscuit-like crust. The contrast between the juicy blackberries and the golden topping creates a comforting dessert that bakes to bubbling perfection. This recipe allows for variation in buttermilk to achieve the right dough moisture, ensuring a cohesive topping. The cobbler balances tartness and sweetness and can be served warm, alone or with ice cream or whipped cream for extra richness.

Description

Perfect Blackberry Cobbler combines fresh blackberries, sugar, cinnamon, and cornstarch cooked down to a thick filling, poured into a greased baking dish. The topping is a biscuit-style dough made from flour, sugar, baking powder, salt, and cold butter combined to coarse crumbs and moistened with cold buttermilk. This dough is dropped in spoonfuls atop the hot blackberry filling before baking until the topping is golden and the filling is bubbling. The topping's crumbly texture contrasts with the juicy fruit beneath.

The flavors are a blend of sweet and slightly tart blackberry with warm cinnamon notes, balanced by the rich, buttery topping. The baking process creates a cozy dessert with a crisp crust and tender interior, accented by the juicy, thickened fruit filling. This cobbler works well as a relaxed dessert and can be enhanced by serving it warm with whipped cream or ice cream on the side.

Adjusting the buttermilk amount modulates the topping’s moisture to hold it together without making it soggy. An alternative method for a thicker cobbler is to mix blackberries with sugar and cornstarch in the baking dish to develop a syrupy base before adding the topping and baking.

Ingredients

Servings

COBBLER

  • 24 oz blackberry fresh
  • 1 cup granulated sugar
  • 1/4 tsp ground cinnamon (optional but recommended)
  • 3 Tbsp cornstarch
  • 3/4 cup water

TOPPING

  • 1 1/2 cups all-purpose flour
  • 1 Tbsp granulated sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp kosher salt
  • 1/2 cup butter cold, grated or finely cubed
  • 1/3 - 1/2 cup buttermilk cold

Instructions

  1. Grease an 8 inch square baking dish.
  2. In a large saucepan, combine the blackberries, sugar, and cinnamon. Cook and stir until mixture comes to a boil.
  3. Combine cornstarch and water until smooth; stir into fruit mixture. Bring to a boil; cook and stir for 2-5 minutes or until thickened.
  4. Pour into prepared baking dish.
  5. For topping, in a small bowl, combine the flour, sugar, baking powder and salt. Cut in butter using a pastry blender or two forks until mixture resembles coarse crumbs.
  6. Stir in buttermilk just until moistened. Drop by tablespoonfuls onto hot berry mixture.
  7. Bake, uncovered, at 350F for 30-35 minutes or until filling is bubbly and topping is golden brown. Serve warm, with whipped topping or ice cream if desired.

Notes

  • The buttermilk quantity may vary; aim for a dough moist enough to hold together when pinched but not wet.
  • For a thicker filling, mix blackberries, sugar, 1 tablespoon cornstarch, and cinnamon in the baking dish and let sit 15–20 minutes before adding the topping.
  • Serve warm with whipped topping or ice cream to complement the warm, juicy cobbler.
