  • 1/2 /2 cup butter salted
  • 1/4 /4 cup coffee strong brewed
  • 4 (1.5-ounce) chocolate broken into pieces
  • 4 cups chocolate chips milk, semi-sweet or dark, divided
  • 1 cup all-purpose flour
  • 1/2 /2 cup cocoa powder unsweetened
  • 1/2 /2 teaspoon baking powder
  • 1/4 /4 teaspoon kosher salt
  • 4 large egg
  • 1 1/2 /2 cups granulated sugar
  • 1 1/2 /2 teaspoons vanilla extract

Instructions

  1. Add butter, strong brewed coffee, chocolate bars and 2 cups chocolate chips to a small saucepan over medium-low heat, stirring frequently to prevent from sticking as it melts. Remove from heat once melted and cool completely.
  2. Whisk together flour, cocoa powder, baking powder, and salt in a medium bowl. Set aside.
  3. Preheat oven to 350º F. Line rimmed baking sheets with parchment paper or silicon baking mats.
  4. Beat together eggs and granulated sugar until the eggs have lightened in color with an electric mixer on medium speed. Lower the speed of the mixer and add in vanilla. Slowly stir in cooled melted chocolate mixture and flour mixture, taking care to stop and scrape down the sides and the bottom to make sure well-combined. Stir in remaining 2 cups of chocolate chips.
  5. Scoop batter with a medium (2 tablespoon) cookie scoop or a heaping tablespoon and drop onto prepared baking sheets.
