Description
These cookies start by creaming softened salted butter with brown and granulated sugars until smooth and creamy. Eggs and vanilla extract are incorporated before folding in dry ingredients including all-purpose flour, baking powder, baking soda, salt, and quick oats, which add chewiness and texture. Semi-sweet chocolate chips, chopped pecans, and unsweetened coconut flakes are folded in last to give flavor contrast and body.
The dough is divided into about 12 large balls and baked at 400°F for 10 to 12 minutes until the tops develop a golden brown color, indicating a baked-through center with slightly crisp edges. For smaller cookies, baking time is reduced to about 8 minutes at the same temperature.
Ingredients
- 1 cup butter softened, salted
- 3/4 cup brown sugar
- 1/2 cup granulated sugar
- 3 large egg
- 2 teaspoons vanilla extract
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup quick oats
- 2 cups chocolate chips semi-sweet
- 3/4 cup pecans chopped
- 3/4 cup coconut flakes unsweetened
Instructions
- Preheat oven to 400 degrees Fahrenheit. Line two baking sheets with parchment paper or a silicone baking mat.
- Using a hand mixer or stand mixer, beat 1 cup salted butter with 3/4 cup brown sugar and 1/2 cup granulated sugar. Mix until smooth and creamy, about 2 minutes.
- Add in 3 large eggs and 2 teaspoons vanilla extract and beat until just combined, about 30 seconds.
- Add in 2 3/4 cups all-purpose flour, 1 teaspoon baking powder, 1 teaspoon baking soda, and 1/2 teaspoon salt. Mix until just combined. Then add in 1 cup quick oats and mix until just combined.
- Pour in 2 cups semi-sweet chocolate chips, 3/4 cup chopped pecans, and 3/4 cup unsweetened coconut flakes and mix in using the paddle attachment or use a large spoon or rubber spatula to fold in.
- Divide the dough into about 12 equal pieces. Use hands to roll into large balls. Place onto prepared baking sheets, 6 per pan.
- Bake in the 400 degree oven for 10-12 minutes, until tops are golden brown.
- Let cool on pan 15 minutes before serving warm, or transfer to a wire rack to cool completely.
Notes
- To make 24 smaller cookies, bake at 400°F for approximately 8 minutes instead of 10-12 minutes.
