Perfect Grilled Pork Chops with Sweet BBQ Rub
Description
Perfect Grilled Pork Chops with Sweet BBQ Rub involves rubbing bone-in pork chops with olive oil and a blend of brown sugar, spices, and dried herbs. The chops are first seared over direct heat on a medium-high grill to develop a crust, then moved to indirect heat to cook through without burning. This approach ensures a balance of smoky char and tender meat. Monitoring the internal temperature using a meat thermometer guarantees the pork is safely cooked to 145°F and remains juicy.
The sweet BBQ rub adds a caramelized, slightly spicy flavor layer that complements the pork. Basting with barbecue sauce during the indirect cooking phase is optional but enhances moistness and adds tangy-sweet notes. Resting the pork chops after grilling redistributes juices for better texture.
These pork chops can be served alongside grilled vegetables, salads, or classic barbecue sides. The spice rub also makes them suitable for casual outdoor meals or weeknight dinners.
Ingredients
- 4 pork chops bone-in
- 2 Tablespoons olive oil
- 1 cup barbecue sauce optional, your favorite
Sweet BBQ Pork Rub
- 2 Tablespoons brown sugar
- 2 teaspoons kosher salt
- 1 teaspoon black pepper freshly ground
- 1 teaspoon paprika
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon oregano dried
Instructions
- Combine all of the rub ingredients in a small bowl and set aside.
- Preheat the grill on medium high heat for 10 minutes until it is around 400°F. Turn off the burners on one side of the grill so that you have a zone of direct heat and a zone of indirect heat.
- Rub the pork chops all over with the olive oil, then sprinkle generously with the sweet bbq rub, massaging it into the meat.
- Place the pork chops on the grill over direct heat and sear for 2-3 minutes, then flip and sear the other side for 2-3 minutes.
- Move the pork chops to the indirect heat side of the grill and cook for another 5-6 minutes per side until the internal temperature of the pork chops reaches 145°F when measured with an instant read meat thermometer. You can baste them with your favorite bbq sauce after turning, if desired.
- Remove the pork chops from the grill and let them rest for 3 to 5 minutes before serving.
