They are tossed with neutral cooking oil, maple syrup, sea salt, and black pepper, optionally enhanced with fresh herbs like rosemary or thyme, or curry powder for added flavor. Roasting at 425°F for 25–35 minutes caramelizes the carrots, creating a sweet and savory balance and tender texture.

  • 2-3 tsp neutral cooking oil see notes for oil-free and less-oil options, generic cooking oil
  • 1 tsp maple syrup
  • 1 healthy pinch sea salt
  • 1 healthy pinch black pepper
  • 1 Tbsp herbs optional, fresh, chopped, such as rosemary or thyme
  • 1-2 tsp curry powder (optional)

Instructions

  1. Heat your oven to 425°F (218°C) and prepare a baking sheet by lining it with parchment paper.
  2. Spread the carrots on the prepared baking sheet, drizzle them with oil and maple syrup, and season with salt, pepper, and—if you like—fresh herbs or curry powder to complement your meal. Toss or rub everything together until the carrots are well coated.
