Perfect Roasted Carrots (Quick & Easy)
Description
Perfect Roasted Carrots start with peeled carrots sliced on an angle into around 1 ½-inch pieces for even roasting. They are tossed with neutral cooking oil, maple syrup, sea salt, and black pepper, optionally enhanced with fresh herbs like rosemary or thyme, or curry powder for added flavor. Roasting at 425°F for 25–35 minutes caramelizes the carrots, creating a sweet and savory balance and tender texture.
The roasting process develops a golden color and slight crispiness on the carrots’ surfaces while keeping the centers tender and flavorful. Tossing the carrots halfway through cooking ensures even browning. Herbs or curry powder can complement the carrot’s flavor, making this a versatile side dish suitable for many meals.
Leftover roasted carrots store well in the refrigerator for 3–4 days but do not freeze well. Gentle reheating in the oven, microwave, or on the stovetop helps maintain their texture. The straightforward method highlights the natural flavor of carrots with minimal ingredients and fuss.
Ingredients
- 5 cups carrot ~1 ⅓ lb. as recipe is written // peeled and sliced on an angle into 1 ½-inch pieces, any larger pieces closer to stem halved - see photo, chopped
- 2-3 tsp neutral cooking oil see notes for oil-free and less-oil options, generic cooking oil
- 1 tsp maple syrup
- 1 healthy pinch sea salt
- 1 healthy pinch black pepper
- 1 Tbsp herbs optional, fresh, chopped, such as rosemary or thyme
- 1-2 tsp curry powder (optional)
Instructions
- Heat your oven to 425°F (218°C) and prepare a baking sheet by lining it with parchment paper.
- Spread the carrots on the prepared baking sheet, drizzle them with oil and maple syrup, and season with salt, pepper, and—if you like—fresh herbs or curry powder to complement your meal. Toss or rub everything together until the carrots are well coated.
- Roast for 25–35 minutes, or until the carrots are golden and lightly caramelized. Give them a toss halfway through to help them cook evenly. Serve them on their own, add to bowls or salads, or pair with almost any main dish.
- Keep any leftovers covered in the refrigerator for 3–4 days. These don’t freeze well. Reheat in a 375°F (190°C) oven, in the microwave, or on the stovetop over medium heat until warmed through.
