Description
This Peri Peri Chicken starts by combining lemon juice, olive oil, paprika, chili flakes, crushed garlic, dried oregano, fresh parsley, black pepper, and sea salt to form a vibrant marinade. Bone-in chicken thighs are coated in the marinade and chilled for 30 to 60 minutes to develop flavor. High-temperature baking at 425°F (220°C) produces a lightly charred, crispy exterior and juicy meat inside, with an internal temperature target of 165°F (74°C) for safe consumption.
The chili flakes provide adjustable heat depending on preference. Garlic and herbs impart depth to the citrus-spiced marinade. Baking rather than grilling offers an accessible cooking method replicating the distinctive peri peri taste with an easy baking finish.

Ingredients
- 8 chicken thighs
Marinade
- 2 lemon juice only, plural
- 2 tablespoon olive oil
- 2 teaspoon paprika
- 2 teaspoon chili flakes adjust to taste
- 4 cloves garlic crushed, clove
- 2 teaspoon oregano dried
- 1 tablespoon parsley finely chopped, fresh
- 1 pinch sea salt
- 1 pinch black pepper
Instructions
- Put all of the marinade ingredients in a bowl and mix well.
- Put the chicken into a large bowl and add the marinade. Mix well. Put in the fridge for 30-60 minutes so the chicken marinates.
- Preheat your oven to 220°C/200°C(fan)/425°F/Gas 7.
- Put in a baking dish or onto a baking sheet.
- Put into the oven and bake for 40 minutes, or until the chicken is cooked through (reaching an internal temperature of 74°C/165°F)
Notes
- Reduce chili flakes to 1 teaspoon if a milder heat level is preferred.
- Arrange chicken pieces with space between them for even baking.
- Marinate the chicken overnight for deeper flavor if time permits, or at least 30 minutes.
- Verify doneness with an instant-read thermometer aiming for 165°F internal temperature.
- You can use other chicken parts like drumsticks, breasts, or a whole chicken instead of thighs.
- Make homemade peri peri sauce by blending the marinade ingredients with extra lemon juice, oil, and vinegar.
