Peri Peri Chicken Recipe
Description
The Peri Peri Chicken Recipe involves seasoning bone-in chicken pieces with salt, then marinating them in a mixture of Peri Peri sauce, lemon juice, garlic powder, smoked paprika, and dried basil or oregano. After marinating for at least one hour (and up to 24 hours), the chicken pieces are arranged skin side up on a baking sheet and roasted at 400°F.
The chicken is basted halfway through roasting with reserved Peri Peri sauce (from the bottle, not the marinade) to build up flavor layers and a sticky glaze. The result is chicken with a complex mix of spicy, smoky, and herbal notes, balanced by acidity from lemon juice and the natural chicken juices released during roasting.
This dish works well for gatherings given the amount of chicken and makes excellent leftovers. The marinade’s heat level depends on the Peri Peri sauce chosen, with medium being spicy for most people and hot suitable only for those who can handle strong heat.
For reheating leftovers, warming in a 350°F oven helps maintain skin crispness, or an air fryer can be used for convenience and texture.
Ingredients
- 4-5 pounds chicken 8 pc fryer pack, bone-in pieces
- 9 ounces peri peri sauce medium or hot (like Nando’s)
- 1 ½ tablespoons lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- ½ teaspoon basil or oregano, dried
- salt
Instructions
- Place the bone-in chicken pieces in a baking dish. Pat the chicken pieces dry and sprinkle liberally with salt.
- In a small mixing bowl, combine the Peri Peri sauce, lemon juice, garlic powder, smoked paprika, and dried basil. Mix well.
- Portion out ½ cup of Peri Peri sauce to pour over the chicken pieces. Move the chicken around the pan to make sure it is well coated. Then cover and chill for at least one hour, but up to 24 hours. Reserve the rest of the Peri Peri sauce for later use.
- When ready to cook, preheat the oven to 400°F. Move the chicken pieces to a large rimmed baking sheet, skin side up, separating them so they do not touch.
- Use a basting brush to brush any remaining Peri Peri sauce, from the dish, over the tops of the chicken.
- Roast in the oven for 20 minutes. Then brush the tops of the chicken again with the reserved Peri Peri sauce. (Sauce from the bottle, NOT the baking dish.)
- Roast again for 20 minutes, or until the thickest pieces are cooked through.
Notes
- Medium Peri Peri sauce is spicy; choose hot only if you prefer strong heat.
- Store cooked chicken in an airtight container in the refrigerator for up to 3-4 days.
- Reheat leftovers in a 350°F oven for 10-15 minutes to keep skin crisp, or use an air fryer.
