Description

This recipe begins by cutting large potatoes into thick fries, soaking them in cold water to remove excess starch, then drying thoroughly before tossing in oil. Preheated baking trays ensure even heat and help crisp the fries' exterior during baking at 220°C (430°F) for 35-40 minutes. Turning trays halfway through promotes uniform golden color and texture.

The fries are finished by seasoning generously with peri-peri seasoning, which typically combines spices including chili, garlic, and paprika for vibrant flavor and heat. Using frozen fries is a convenient alternative with a similar seasoning process.

Suitable potato varieties include Yukon Gold, Russet, and King Edward, among others. Oils like peanut, olive, canola, or vegetable oil can be used depending on flavor preference and smoke point considerations.   • 4 potato see notes 1&2, large
  • ¼ cup neutral cooking oil see note 3, generic cooking oil

If using Frozen Fries

  • 1 lb French Fries see note 2, frozen

Seasoning

  • 3 tablespoon peri-peri seasoning - Recipe below ALSO see note 4

Instructions

For homemade fries in oven/air fryer (See below for frozen fries)

  1. Cut the potatoes into thick slices and then cut into even-sized fries.4 large potatoes
  2. Transfer to a large bowl and cover with cold water. Leave to soak for at least 15 minutes, but you can leave them for a couple of hours.

OVEN COOKING

  1. Preheat the oven to 430ºF/220°C
  2. Drain and rinse the potatoes, then dry well on a clean tea towel.
  3. Place the potatoes in a dry bowl and pour over the oil.¼ cup / 60 ml oil
  4. Turn the potatoes with your hands until they are all evenly coated.
  5. Place two baking sheets in the oven to heat up.
  6. Remove the trays from the oven and line them with cooking paper.
  7. Bake the potatoes in the middle to bottom of the oven for 35-40 minutes, until the potatoes are cooked through, and crispy and golden on the outside. (Depending on your oven, you may need to switch the trays over halfway through cooking.)
  8. Remove the potatoes from the oven, tip into a bowl, and sprinkle with the peri peri seasoning mix while they are still hot.3 tbsp Peri-peri seasoning

AIR FRYER COOKING

  1. Preheat your air fryer to 375ºF/190ºC and your oven to 200ºF/90ºC
  2. Drain and rinse the potatoes, then dry well on a clean tea towel.
  3. Place the potatoes in a dry bowl and pour over the oil.¼ cup / 60 ml oil
  4. Turn the potatoes with your hands until they are all evenly coated.
  5. Add the first batch of fries to the bottom of the air fryer basket, making sure not to stack them on top of each other.
  6. Cook for 15 minutes until crispy and golden brown.
  7. Place the cooked fries on a rack on a baking sheet.
  8. Place in the warm oven, and while you cook, the other batches of fries are cooking.
  9. Once you are done with all the potatoes, remove them from the oven, tip into a bowl, and sprinkle with the peri-peri seasoning mix while they are still hot.3 tbsp Peri-peri seasoning

For Frozen French Fries (See above for homemade fries)

  1. Cook the fries as per the packet instructions.1 lb / 450 g frozen french fries
  2. To make the most of your frozen fries, preheat your oven/air fryer and don't allow the fries to defrost beforehand.
  3. If you can, bake the frozen fries on an oven rack to ensures they cook evenly.
  4. Once cooked, sprinkle with the peri peri seasoning blend and serve.3 tbsp Peri-peri seasoning

Notes

  • Potatoes such as Yukon Gold, Russet, Sebago, Red Delight, King Edward, or Desiree are suitable for making fries.
  • Homemade fries require soaking cut potatoes in cold water for at least 15 minutes to remove starch, resulting in crispier fries.
  • Peanut oil is recommended for frying, but olive oil, canola, vegetable, sunflower, or melted coconut oil can be used as substitutes.
  • Frozen French fries can be used for convenience and simply seasoned with peri-peri after cooking.
