Persian Dill Rice with Peas
Description
This recipe blends basmati rice with dried dill and peas, seasoned simply with salt and olive oil. The rice is rinsed before cooking to remove excess starch, then cooked in water over medium heat until almost done. Wrapping the pot lid with a kitchen towel traps steam and absorbs extra moisture, promoting a light, fluffy texture without sogginess. If the rice is still firm after the initial steaming, additional water is added, and cooking continues until fully tender.
The dill imparts a herbal aroma and subtle flavor that pairs well with the natural sweetness of peas. The peas can be added at the start or near the end depending on the chosen type, with frozen peas included from the beginning and canned or fresh peas added later to preserve texture.

Ingredients
- 2 cups basmati rice
- 3/4 cup dill see notes, dried
- 1 can (15 oz.) pea drained
- 1 tsp salt
- 2 tbsp olive oil
- 3 1/2 cups water
Instructions
- Rinse the Basmati rice a few times and place it in a large pot.
- Add the dried dill and peas to the pot.
- Add in the salt, olive oil and water. Place the pot over medium heat and bring it to a boil.
- Once the water is almost evaporated and the rice is almost cooked, wrap the lid in a kitchen towel and place it on the pot.
- Lower the heat and cook the rice for 10 more minutes. Check the rice and see if it's cooked completely. If it's still firm, add 1/4 cup more water and cover with the lid. Cook for another 10 minutes util it's fluffy and fully cooked.
- Serve warm.
Notes
- Fresh dill can be used instead of dried dill with the same cooking method.
- Ensure the pot is large enough since basmati rice doubles in size when cooked.
- Peas may be added at the beginning if frozen or near the end for fresh or canned peas to maintain texture.
