Persimmon Cookies

Persimmon Cookies blend ripe persimmon pulp with warm spices, nuts, and a sweet glaze to create soft, spiced cookies. The dough incorporates white whole wheat and all-purpose flours with cinnamon, nutmeg, and cloves for aromatic depth. Chopped walnuts add texture, and a glaze made with powdered sugar, orange juice, and persimmon pulp finishes the cookies with a glossy sweet touch. They bake to a tender set with a flavorful, moist crumb.

Description

This recipe starts by mixing all-purpose and white whole wheat flours with baking soda and warming spices including cinnamon, cloves, and nutmeg, creating the dry base. Butter and sugar are creamed until fluffy before blending in persimmon pulp, egg, and vanilla, which adds moisture and sweetness to the dough. The flour mixture is then incorporated gently along with chopped walnuts for crunch. The dough is scooped onto baking sheets and baked until set but tender. After baking, a glaze made from powdered sugar, fresh orange juice, and persimmon pulp is prepared and the cookie tops are dipped in it, providing a lightly sweet, citrusy coating that hardens as it cools. These cookies showcase the unique flavor and moisture of persimmons combined with classic fall spices and nuts.
