Peruvian Anticuchos de Pollo: Peruvian Chicken Skewers
Description
This recipe for Peruvian Anticuchos de Pollo begins with a marinade combining aji panca paste, red wine vinegar, vegetable oil, minced garlic, oregano, cumin, and salt, which captures characteristic Peruvian flavors. The marinade tenderizes and seasons the cubed chicken breasts or boneless thighs during an overnight refrigeration, allowing the spices to deeply penetrate the meat.
Cooking involves grilling the skewered chicken over medium-high heat arranged for two-zone cooking, which ensures thorough cooking and prevents burning. The skewers are turned regularly until the internal temperature reaches 165°F, confirming the chicken is safely cooked. This method yields moist, evenly cooked chicken pieces with a smoky grilled exterior.
Peruvian Anticuchos de Pollo can be served warm as an appetizer or alongside rice, salads, or grilled vegetables. Its bright marinade offers a cultural touch to grilled chicken skewers and works well for outdoor cooking or casual meals.

- 2 Pounds chicken Breasts or boneless thighs, cubed

- 2 Tablespoons vegetable oil
- 1 Tablespoon oregano or 2 teaspoons died, fresh
- 1 Tablespoon garlic minced
- ½ teaspoon cumin

- Cube the chicken and add to the marinade. Cover as refrigerate overnight.
- When ready to cook, preheat your grill for medium-high heat, about 400 degrees. Set it up for 2 zone cooking.
- Carefully skewer the chicken onto the skewers. If using wooded skewers, soak them first.
- Grill the chicken, flipping the skewers every few minutes. Remove when the internal temperature of the chicken reaches 165 degrees and the chicken is cooked through. If some get done sooner than others, move those to the cooler side of the grill.
