Description

Ingredients
- 1½ cups chicken shredded or diced, cooked
- ½ cup Greek yogurt
- ½ packet pesto seasoning mix Knorr's brand
- ½ cup apple diced
- 2 tbsp red onion diced
- 1 tbsp mayonnaise
- 1 tbsp almonds slivered
- 1 talk celery
- hot sauce just a splash
- lemon juice just a splash
- salt to taste
- black pepper to taste
Instructions
- In a mixing bowl, add Greek yogurt, mayonnaise, lemon juice, and hot sauce. Mix together. Pour in pesto seasoning and mix until completely dissolved.
- If not already done, shred your chicken, then add to bowl with the dressing.
- Chop celery, red onion, slivered almonds, and apple into fine pieces. Add to bowl with the dressing and stir until everything is completely coated.
- Stir in a pinch of salt and cracked pepper to taste.
- Enjoy with a fork, on bread, with crackers, over lettuce or my favorite, on a wrap!
Notes
- To make a wrap, layer spinach, avocado, extra hot sauce, and the chicken salad on a wrap, then fold it like a burrito before eating.
- Adjust the quantities of fresh ingredients to achieve your preferred salad texture, adding more or less apple, celery, or onion.
- Store the chicken salad in the fridge for up to five days, keeping it separate from bread or wraps until serving to avoid sogginess.
