Pesto Gnocchi Recipe

This Pesto Gnocchi features tender potato gnocchi sautéed with diced zucchini and yellow bell pepper, then tossed with vibrant pesto sauce and fresh tomato. Toasted pine nuts and shredded Parmesan add a crunchy, savory finish. The dish blends soft gnocchi and crisp vegetables for a balanced texture and herbaceous flavor profile.

Description

The gnocchi are cooked according to package instructions until just tender, then drained. While the gnocchi cook, diced zucchini and yellow bell pepper are sautéed in olive oil over medium heat until softened, which adds a lightly caramelized, sweet vegetable component. After cooking, the gnocchi are gently combined with the vegetables and pesto sauce, coating each piece evenly with the sauce’s herb and garlic notes. Chopped fresh tomatoes are folded in carefully to maintain their fresh texture and color.

To finish, the dish is topped with toasted pine nuts, which contribute crunch and a nutty flavor contrast, and shredded Parmesan cheese for savory richness. This creates a harmony between soft gnocchi, tender sautéed vegetables, fresh tomato, and textured topping.

Served warm, this pesto gnocchi can be enjoyed as a vegetarian main course or side dish. The combination of fresh ingredients and simple preparation highlights the flavors of spring vegetables with classic pesto and potato gnocchi.
