Pesto Pasta Recipe
Description
This pesto pasta starts by cooking pasta to al dente in salted boiling water. After draining, the pasta is combined with a cup of spinach basil pesto or another pesto variant, and Parmesan cheese is mixed in to add savory depth. A drizzle of olive oil rounds out the dish with smoothness and slight richness. The pesto brings herbal brightness from basil and spinach, while the Parmesan adds a salty and tangy complement.
The texture is tender but firm pasta coated evenly with the pesto sauce. It can be served as a light main course or a side dish accompanying grilled meats or vegetables.
Ingredients
- 1 cup Spinach Basil Pesto or any other pesto you like, my recipe
- 1 pound pasta uncooked
- 1/4 cup Parmesan Cheese or more to taste, freshly grated, to taste
- olive oil
- basil sliced, for serving
Instructions
- In a large pasta pot, cook the pasta to al dente, according to the instructions of the package, in salted boiling water.
- Drain the pasta, and put it back in the pot.
- Add in the pesto and some parmesan cheese, and toss to combine.
- Serve drizzled with more olive oil and sprinkled with more cheese.
