  • 1 cup cherry tomato

Instructions

  1. Slice the zucchini into noodles using a spiralizer or mandolin slider.
  2. Add 1 tablespoon of olive oil to a large saute pan. Add the zucchini noodles and saute for 3-4 minutes over medium high heat.
  3. Transfer the zoodles to a serving bowl and add the basil pesto and tomatoes
  4. Toss to coat well.

Notes

  • Top the dish with parmesan cheese or nutritional yeast to enhance flavor.
  • Add proteins such as chicken or shrimp for a fuller meal.
  • Include sliced onions, scallions, or minced garlic for added aroma and flavor.
  • Adding lemon juice adds a subtle citrus brightness.
  • To add texture, toast and sprinkle nuts or seeds like almonds, pumpkin seeds, sunflower seeds, or pine nuts.
