Pickle-Brined Baked Chicken Tenders

Pickle-Brined Baked Chicken Tenders use dill pickle juice as a brining liquid to add subtle tartness and moisture to chicken tenderloins before breading and baking. The chicken gains a tender texture from the brine, then develops a crispy, golden coating by dipping in egg wash and seasoned breadcrumbs and baking at a high temperature until browned and cooked through.

Description

This recipe involves marinating chicken tenderloins (or breast strips) in dill pickle juice for 8 hours, which infuses the meat with a mild tang and juices it up. After brining, the chicken is patted dry to ensure the coating adheres well. An egg wash seasoned with salt and pepper helps the breadcrumb-panko mixture cling evenly, creating a crunchy crust when baked.

The baking method uses a preheated oven at 425°F to achieve browning both below and above, turning the chicken midway for even cooking. Spraying oil on the chicken and baking sheet promotes crispiness without deep frying. The result is juicy chicken tenders with a coating crisped by the seasoned crumb mix, with a subtle pickle flavor background.

These tenders can be served as a snack, in sandwiches, or paired with dipping sauces. The method avoids frying, offering a baked alternative that still delivers a crisp texture.
