Ingredients

  • 4-5 cucumber thinly sliced, small Persian or Kirby
  • 1 avocado chopped into 1 inch pieces, ripe
  • 3/4 teaspoon kosher salt
  • 1 - 2 teaspoons sugar start with 1 and taste, as more as desired
  • 3 tablespoons rice wine vinegar unseasoned
  • 2 teaspoons sesame oil toasted
  • 2 teaspoons sesame seeds toasted

Instructions

  1. Using a mandoline or a knife, slice cucumbers as thinly as possible.
  2. In a medium bowl, mix cucumbers with salt and sugar and let it sit for a minute or two to soften.
  3. Add vinegar and sesame oil.
  4. Gently stir in avocado and top with sesame seeds.
