Ingredients
- 4-5 cucumber thinly sliced, small Persian or Kirby
- 1 avocado chopped into 1 inch pieces, ripe
- 3/4 teaspoon kosher salt
- 1 - 2 teaspoons sugar start with 1 and taste, as more as desired
- 3 tablespoons rice wine vinegar unseasoned
- 2 teaspoons sesame oil toasted
- 2 teaspoons sesame seeds toasted
Instructions
- Using a mandoline or a knife, slice cucumbers as thinly as possible.
- In a medium bowl, mix cucumbers with salt and sugar and let it sit for a minute or two to soften.
- Add vinegar and sesame oil.
- Gently stir in avocado and top with sesame seeds.
