Pickled Cucumber Side Dish

Turn Asian pickled cucumbers into a spicy salad to eat with rice. Korean chili flakes and a hint of sugar makes this simple side dish delicious and makes it a great way to enjoy pickled cucumbers.

Ingredients

  • 1 lb pickled cucumber thinly sliced, Korean style
  • 1.5 tablespoon gochugaru Korean chili flakes
  • 2 teaspoon sugar
  • 1 green onion finely chopped
  • 1/2 teaspoon garlic powder
  • 1 tablespoon plum extract optional, Korean, maeshil cheong
  • 1 teaspoon sesame oil
  • 1-2 teaspoon sesame seeds toasted

Instructions

  1. Soak the cucumber slices in cold water for 10 minutes to dilute the brine a little. Drain and squeeze out the excess water.
  2. Place the cucumber slices in a mixing bowl, add the rest of the ingredient, and toss well. Adjust the amount of sugar according to the sweetness you desire. Serve with rice.
