Pickled Red Onions
Description
Pickled Red Onions combine thin slices of red onion with a warm brine made from apple cider vinegar, water, sugar, salt, garlic cloves, black peppercorns, and a sprig of fresh thyme. The mixture is heated briefly to dissolve the sugar and salt, then poured over the onions in a jar where they absorb the flavors. After sitting at room temperature for an hour and then chilling for at least two hours, the onions develop a balance of tanginess and subtle sweetness with herbal and savory notes from the garlic and thyme.
This pickling technique results in crisp yet tender onions that provide a bright contrast to rich or savory foods. They can be served atop tacos, burgers, salads, or grilled meats, lending a refreshing acidity and vibrant color to dishes.
The recipe uses a mandoline or careful slicing to achieve even slices, enhancing the texture and appearance. Storing the pickled onions in an airtight container maintains their flavor for up to two weeks.
Ingredients
- 1 1/2 cups red onion thinly sliced
- 1 small garlic halved, clove
- 6 black peppercorns
- 1 small sprig thyme fresh
- 3/4 cup apple cider vinegar
- 1 cup water
- 1 tablespoon granulated sugar
- 1 1/2 teaspoons kosher salt
Instructions
- Place the onions in a jar along with the garlic, peppercorns and thyme.
- Place the apple cider vinegar, water, sugar and salt in a small pot over medium high heat.
- Bring to a simmer. Cook for one minute, or until sugar and salt have dissolved.
- Carefully pour the liquid into the jar of onions. Let the jar sit at room temperature for one hour.

Notes
- For uniform thin slices, use a mandoline or carefully slice into thin rings or half-rings.
- The pickled onions should be kept in a sealed glass or airtight container during refrigeration.
- Allow at least two hours chilling before serving to develop optimal flavor and texture.
- Store refrigerated pickled onions for up to two weeks for best freshness.
