  • 1 1/2 cups red onion thinly sliced
  • 1 small garlic halved, clove
  • 6 black peppercorns
  • 1 small sprig thyme fresh
  • 3/4 cup apple cider vinegar
  • 1 cup water
  • 1 tablespoon granulated sugar
  • 1 1/2 teaspoons kosher salt

Instructions

  1. Place the onions in a jar along with the garlic, peppercorns and thyme.
  2. Place the apple cider vinegar, water, sugar and salt in a small pot over medium high heat.
  3. Bring to a simmer. Cook for one minute, or until sugar and salt have dissolved.
  4. Carefully pour the liquid into the jar of onions. Let the jar sit at room temperature for one hour.
  5. Cover the jar and refrigerate. Let it sit for at least two hours before serving, or up to two weeks.

Notes

  • For uniform thin slices, use a mandoline or carefully slice into thin rings or half-rings.
  • The pickled onions should be kept in a sealed glass or airtight container during refrigeration.
  • Allow at least two hours chilling before serving to develop optimal flavor and texture.
  • Store refrigerated pickled onions for up to two weeks for best freshness.
