Picnic Cake
Description
Picnic Cake combines quick oatmeal soaked in boiling water and melted butter with a blend of sugars, eggs, cocoa, cinnamon, and flour to form a rich, dense batter. The inclusion of chocolate chips throughout provides pockets of melted sweetness, while chopped nuts scattered on top contribute a crunchy texture. Baking this in a 9x13 pan yields a generously sized cake with a moist crumb.
The warm spices and cocoa create a subtly spiced and chocolatey flavor profile balanced by the oatmeal’s hearty texture. The baking process melds these elements into a cake with a tender interior and lightly crisp edges.
This cake is hearty enough to enjoy on its own, but topping it with whipped cream or vanilla ice cream adds a creamy contrast to the denser cake. It is suitable for casual gatherings or everyday treats.
Adding fresh fruit atop the cake can introduce a bright, sweet note. Alternatively, melting additional chocolate for a drizzle creates a simple frosting. Choosing your favorite nuts adds personal preference to the crunchy component.
