Pie Crust Recipe

This Pie Crust Recipe provides a classic, flaky pastry dough made with a blend of all-purpose flour, salt, and two types of vegetable shortening. Combined carefully with cold water, egg, and vinegar, the dough forms tender, flaky layers suitable for sweet or savory pies. The method focuses on handling the dough gently to achieve a light texture without overworking it, which can lead to toughness.

Description

The Pie Crust Recipe starts by blending flour and salt, then cutting in both butter-flavored and plain vegetable shortening until small pea-sized lumps form. A mixture of cold water, egg, and white vinegar is gradually added to create a dough that is just moist enough to hold together without overworking. The dough is formed into five balls, which are chilled before rolling to maintain flakiness and ease of handling.

By avoiding kneading, this pastry achieves a tender crumb and flaky texture when baked. The inclusion of vinegar may help tenderize the dough, while the combination of shortenings balances flavor and structure. The dough is portioned to allow convenient use for multiple pies or crust layers.

Once chilled, the dough can be rolled out and used immediately. Any unused dough balls are stored wrapped in plastic for refrigeration or freezing, with frozen dough needing a full day to thaw in the refrigerator before use.

Ingredients

Servings
  • 5 1/2 cups all-purpose flour
  • 2 teaspoon salt
  • 2/3 cup vegetable shortening butter flavored, Crisco brand, all-vegetable
  • 1 2/3 cups vegetable shortening Crisco brand
  • 7/8 cup water this is 1 cup of cold water minus 2 tablespoons, cold
  • 1 large egg
  • 1 tablespoon white vinegar

Instructions

  1. Blend flour and salt in mixing bowl. Add in both kinds of shortening. Using a pastry cutter, cut shortening into flour to create small lumps about the size of peas. Set aside.
  2. In a small bowl, whisk water, egg, and vinegar together.
  3. Slowly pour in the water-egg mixture into the flour mixture going bit by bit, using a fork to stir and moisten. You will most likely not use it all. Use just enough to form a dough. Form dough into 5 balls. Do your best to not work or knead the dough.
  4. Once your dough comes together into 5 balls, store wrapped in plastic wrap or small freezer bags. Refrigerate an hour or two before rolling. Store remaining dough balls in the freezer for up to six months. Defrost in the fridge for 24 hours before rolling.
