Description
Pimento Macaroni and Cheese starts with macaroni cooked just shy of al dente, ensuring it holds shape during baking. The sauce base is a jarred Alfredo sauce gently simmered, into which grated sharp cheddar and gouda cheeses are whisked in gradually to create a thick, smooth sauce. Pureed pimentos are incorporated, providing a subtle sweetness and mild tang to the creamy cheese sauce.
Evaporated milk is added to adjust the sauce consistency, making it pourable but still rich. The pasta is covered with the sauce, mixed, and transferred to a buttered baking dish to bake covered for 25-30 minutes at 350°F, allowing flavors to meld and the dish to heat through evenly.
Finished with a sprinkle of dried chives if desired, this dish is hearty and flavorful, ideal for serving as a side at gatherings or a standalone comfort food meal. Seasoning salt and black pepper are added to taste, enhancing the cheesy richness without overpowering the pimento's distinct flavor.
Ingredients
- 1 lb macaroni
- 15 oz Alfredo sauce 1 jar
- black pepper to taste - I like a lot
- seasoning salt to taste
- 4 oz Pimentos 1 jar, drained
- 12 oz cheddar cheese grated, sharp
- 12 oz gouda cheese grated
- 1/2 - 1 cup evaporated milk
- chives for garnish, optional, dried
Instructions
- Bring large pot of water to boil. Salt water generously and cook macaroni 1 minute short of al dente. Drain well and set aside.
- In a medium pot, bring alfredo sauce to a simmer, then reduce the heat. Whisk in all grated cheese, a little bit at a time, until thick and smooth. It will be thick! So add in enough evaporated milk to thin it out to the consistency you'd like. {I used about 3/4 cup}. In a small food processor or blender, puree pimentos. Stir into cheese sauce. Add pepper and seasoning salt to taste.
- Pour cheese sauce over pasta and stir to coat. Pour mixture into buttered baking dish and cover with foil. Bake 25 to 30 minutes at 350 degrees. Remove from oven, sprinkle with chives {optional!!} and serve hot.
