Description

Piña Colada Italian Ice Pops combine freshly diced pineapple pieces with a smooth mixture of coconut milk, coconut cream, sweetened condensed milk, and lime juice and zest to capture tropical flavors. The optional coconut-flavored rum adds a subtle adult note. By spooning pineapple chunks into the ice pop sleeves before filling them with the blended creamy base, each pop offers bursts of fruity texture alongside the smooth frozen liquid. Frozen in a flat, uniform shape in plastic ice pop sleeves, these icy treats freeze solid in about 5 hours and can be stored up to 3 months.   • 2 pounds pineapple spears, diced and divided
  • 1 coconut milk unsweetened, canned, 15 ounces
  • 1/2 coconut cream 15 ounces can
  • 1 sweetened condensed milk 14 ounces can
  • lime juice and zest from 2 limes
  • 10 ounces rum optional, coconut flavored

Instructions

  1. Dice 1 pound of pineapple spears and set aside.
  2. Place remaining pineapple, coconut milk, coconut cream, condensed milk, lime juice and zest, and rum (if using) into the well of a blender and blend until mixture is smooth.
  3. Spoon a couple tablespoons of the diced pineapple into each Italian Ice pop sleeve, and using a funnel fill the sleeves with the blended pina colada mixture, leaving about a ½ inch space at the top. Seal. Lay each sleeve onto a baking sheet, in a single layer and place into the freezer. Freeze ice pops for at least 5 hours. Serve.

Notes

  • Keep ice pop sleeves level and flat during freezing to maintain uniform shape and ease of eating.
  • Leave about ½ inch space at the top of sleeves before sealing to allow for expansion when freezing.
  • Piña Colada ice pops will keep well in the freezer for up to 3 months.
